Brinjal Curry


Ingredients:
  1. Urad dal:1/2 tsp
  2. Channa dal:1/2 tsp
  3. Coriander seeds:1/2 tsp
  4. Red chillies:5-6
  5. Hing or asafoetida powder:2 pinch
  6. salt to taste
  7. Oil for frying
  8. Brinjal:200 gms
  9. Mustard seeds:1/4 tsp

Method:

  1. Cut the Brinjals longitudinally into 4 or 6 or 8 bite sized pieces(depending on the size of the brinjal) and keep aside.
  2. Fry Urad dal,Channa dal,Coriander seeds,red chillies and hing brown in a little oil.Grind into a fine powder and keep a side.
  3. Heat a little oil in a pan and add mustard seeds,when it crackles add the brinjal pieces and fry well,adding some more oil,if needed.
  4. When the brinjals are done to a turn,add the powder and salt to taste,saute for another 2-3 minutes and serve hot as side dish for dal or sambar.
